{Soup}er Saturday

The weather here is nutso lately. Snow one day, sunny and 50 degrees the next. So what to do with the lasting winter days but enjoy some delicious heartwarming soup. Soup is one of my favorite things in this world. We opened our 10 year time capsules in January and as answer to favorite food, I listed soup. Sad, but true. I have a thing for soup. So here are a few of my fave recipes to brighten up those overcast, snow covered days!

Corn and Shrimp Chowder and
Triple Cheese Flatbread
from Betty Crocker

Found this recently and the little guy had all the shrimp eaten out of his bowl before I got ours on the table. He loved it and ate every bite by himself which is saying something for him!


Bacon Cheeseburger Chowder

(adapted from Cheeseburger chowder from Angel Shannon)


Ingredients:
1/2 lb. ground beef
8 slices crispy cooked bacon
3 medium russet potatoes, peeled and cubed
½ cup chopped celery
¼ cup chopped onion
1 T. beef bouillon granules
¼ t. pepper
½ t. salt
1½ cups water
2½ cups milk
3 T. flour
1 cup shredded sharp Cheddar

Brown beef in stock pot; drain. Stir in
celery, potatoes, onion, bouillon, pepper, salt and water. Cover and cook on medium heat for 20 minutes. Whisk flour into ½ cup of milk; add to pot along with remaining milk. Cook and stir until thickened. Add cheese; heat, stirring until cheese melts.

MMMmmm!


Wild Rice Soup

recipe by Jennifer Moore

1/4 cup butter
1 medium onion
1/4 cup flour
3 cups chicken broth
1 cup cooked wild rice
1 cup cooked white rice
1 cup diced ham
1/2 cup finely shredded carrots
3 T. sliced almonds
1/2 t. salt
Pepper to taste
1 pint half and half
Snipped fresh parsley

Saute onion in butter. Blend in flour and cook for 5 minutes. Stir in broth and cook to a simmer, stirring. Add ham, rice, carrots, almonds, salt and pepper. Simmer for 10 minutes. Add parsley and half & half. Heat to serving temperature.

Marshmallow Pops

Need a fun quick Valentine treat for the kiddos? How about some cute little marshmallow pops. They are super fast and cause big smiles.

What you will need for Marshmallow Pops:

  • Heart shaped marshmallows
  • White or chocolate chips (whatever you want to dip them in)
  • Jelly Hearts
  • Sprinkles
  • Skewers or sucker sticks (cut the skewers in thirds with heavy duty shears, mine are Cutco)
  • Ribbon

Put a marshmallow on top of a stick. Dip it in melted chips. Sprinkle with sprinkles. (ha ha) Put a jelly heart on the bottom to make it stand up. Put in fridge for a minute to harden chocolate faster. Add a little flair with ribbon.

Store in a Ziploc bag so the marshmallows don’t harden.

Super Bowl Recipes

Some go for the game, not gonna lie, I go for the food (and the commercials of course, I was an Advertising major, what can I say?!). You can’t have a great Super Bowl party unless it is accompanies by great Super Bowl recipes! Here’s one of our favorites.

Not sure where it came from, it just showed up one year and has been a favorite ever since. Seriously, these are always the first to go. You have to make them ahead of time, otherwise you will not be able to keep up with people stealing them off the plate! Trust me, I am usually the one doing the stealing. I don’t even like peperoncini, but the cream cheese tames the spice and makes a great combo!

Supplies:
  • Italian Dry Salami
  • Peperoncini (I bought sliced so I would not have to do it)
  • Cream Cheese
  • Toothpicks

Lay out a salami slice. Add a scoop of cream cheese and a slice of peperoncini. Roll up and secure with a toothpick.

It is easy to adapt for kiddos, just leave out the peperoncini. My little guy ate like five while I was making the display for the pics.

Can you tell which team we are rooting for? Green and Yellow Toothpicks…

Yep, the Packers!

My team was pretty much chosen by birth since my maiden name is Packer.

BTW, did you like my footbowl? I won it from Frito Lay last year for this healthy football dip recipe. Another must have Super Bowl Recipe! It is basically the first few layers of 7 layer dip.

Make Snow Cones

It’s here. It’s plentiful, so why not make use of it?!

My little guy could sit outside and eat snow for hours so I decided to bring it inside and make snow cones. It is oh so easy to add a little flavor and kick up the fun.

How to Make Snow Cones

1. Scoop up a bunch of clean fresh white snow.

2. Mix up some “snow cone syrup.” I used one of those Welch’s single serving packets meant for a water bottle and mixed it with about 6 oz. of water. Countrytime, Hawaiian Punch (get them at Dollar Tree) and Kool-Aid makes the packets too so you could have a variety of flavors.

3. Pour it on.

He sat there and ate it until it was gone.
