{Soup}er Saturday

The weather here is nutso lately. Snow one day, sunny and 50 degrees the next. So what to do with the lasting winter days but enjoy some delicious heartwarming soup. Soup is one of my favorite things in this world. We opened our 10 year time capsules in January and as answer to favorite food, I listed soup. Sad, but true. I have a thing for soup. So here are a few of my fave recipes to brighten up those overcast, snow covered days!

Corn and Shrimp Chowder and
Triple Cheese Flatbread

Found this recently and the little guy had all the shrimp eaten out of his bowl before I got ours on the table. He loved it and ate every bite by himself which is saying something for him!


Bacon Cheeseburger Chowder

(adapted from Cheeseburger chowder from Angel Shannon)


Ingredients:
1/2 lb. ground beef
8 slices crispy cooked bacon
3 medium russet potatoes, peeled and cubed
½ cup chopped celery
¼ cup chopped onion
1 T. beef bouillon granules
¼ t. pepper
½ t. salt
1½ cups water
2½ cups milk
3 T. flour
1 cup shredded sharp Cheddar

Brown beef in stock pot; drain. Stir in
celery, potatoes, onion, bouillon, pepper, salt and water. Cover and cook on medium heat for 20 minutes. Whisk flour into ½ cup of milk; add to pot along with remaining milk. Cook and stir until thickened. Add cheese; heat, stirring until cheese melts.

MMMmmm!


Wild Rice Soup

recipe by Jennifer Moore

1/4 cup butter
1 medium onion
1/4 cup flour
3 cups chicken broth
1 cup cooked wild rice
1 cup cooked white rice
1 cup diced ham
1/2 cup finely shredded carrots
3 T. sliced almonds
1/2 t. salt
Pepper to taste
1 pint half and half
Snipped fresh parsley

Saute onion in butter. Blend in flour and cook for 5 minutes. Stir in broth and cook to a simmer, stirring. Add ham, rice, carrots, almonds, salt and pepper. Simmer for 10 minutes. Add parsley and half & half. Heat to serving temperature.

    Oo thanks for sharing. I’ll have to give them a try. One of my favs is Broccoli cheese soup with diced potatoes and shredded carrots in it!

    I don’t know what to say about the shrimp chowder. I never tried one before, but since I like shrimps, I guess I would enjoy this one too. My favorite is the wild rice soup and also the bacon cheeseburger one. Thanks for sharing them. I too have a thing for soups. Especially the creamy and thick ones.
