Pizzadilla: 3 minute lunch for kids

Do you ever have one of those days where you just can’t? This Pizzadilla recipe is for you. You know, for the days when you’re knee deep in laundry, the kids have lined up every matchbox car throughout the entire house and the school drop off monitor gave you the eye because your car was only halfway in the yellow area when you let the kids out of the car. At least you are wearing your nice pajamas today.

Don’t worry! I’ve got you! The Pizzadilla is the easiest lunch and get this, my kids request it! Crowd pleaser, mom pleaser, it’s a win-win. And I’m not even sure it needs to be called a recipe, it is literally that simple. Really, most kids can probably do it themselves or at least help with the process.

Pizzadilla: 3 minute lunch

Combine two kid favorites: pizza and quesadillas

Course Appetizer, Snack

Prep Time 1 minute
Total Time 3 minutes
Servings 1 Quesadilla

Ingredients

  • 1/4 Cup Shredded Cheddar
  • 1/4 Cup Shredded Mozzarella
  • 6 Pepperoni Slices
  • 2 Soft Taco sized Flour Tortillas
  • Marinara Sauce for dipping (optional)

Instructions

  1. Lay down one tortilla. 

  2. Spread cheddar evenly over tortilla.

  3. Place pepperoni slices evenly over cheddar.

  4.  Spread mozzarella evenly over pepperoni.

  5. Place second tortilla on top. 

  6. For crispy tortilla, warm each side for 1-2 minutes in a heated frying pan sprayed with cooking oil. 

  7. Speed method: Microwave on a plate for 30 seconds each side.

Remember, if you dip them in Marinara you have your vegetable side. lol That’s a lot of food groups packed in one little triangle. Admittedly, I usually serve them with baby carrots or apple slices on the side since I can get those on the plate while the Pizzadilla is cooking.

On Weekends, I like to have my older kids help with meals so they can learn to prep easy items. You know, so they don’t go off to college not knowing how to boil water or use a microwave (true story of my sister’s roommate). A Pizzadilla is a lunch that I can easily have them whip up for their younger siblings while I run to the store or hide in the pantry and eat chocolate. Truly, I don’t mind eating them on occasion when we are in a hurry.

Peanut Butter Oreo Rice Krispie Treats

Each Sunday we have family movie night and I whip up a special treat to share. Peanut Butter Oreo Rice Krispie Treats was the result of one of these sugary sweet experiments. We have some favorites that we make often, but every once in a while we go a little wild and invent something new.  We love Oreos dipped in peanut butter, but that is a messy treat to take down to the theater room with little ones so mixing them with a handheld treat was the perfect solution!

The best part is they are so easy! You can whip them up in a matter of minutes. Just use your standard Krispie treat recipe, but replace a cup of the cereal with a cup of crushed Oreos and add in a scoop of peanut butter. Adding peanut butter adds protein which makes them a better snack, right? Ha!

Peanut Butter Oreo Rice Krispie Treats

A mash up of favorites in one tasty and crispy treat!

Prep Time 10 minutes
Cook Time 10 minutes
Total Time 20 minutes
Servings 12 servings

Ingredients

  • 3 Tbsp Butter
  • 4 cups Miniature Marshmallows
  • 1/3 cup Peanut Butter
  • 5 cups Rice Krispies
  • 1 cup crushed Oreo Cookies

Instructions

  1. In large microwave-safe bowl heat butter and marshmallows on HIGH for 3 minutes, stirring in peanut butter after 2 minutes. Stir until smooth. Microwave cooking times may vary.

    2. Add Rice Krispies cereal and crushed Oreos. Stir until well coated.

    3. Using buttered spatula evenly press mixture into 13 x 9 x 2-inch pan coated with cooking spray. Cool. Cut into 2-inch squares. Best if served within 24 hours.

Turtle Cookies

It’s cookie exchange season and there’s few things we love more than something that seems really special, but is secretly super easy! So what can take cookies to that next level? Candy. Or emulating your favorite candies. How about turtles with their pecans, chocolate and ooey gooey caramel. I took that idea and combined it with my favorite cookie recipe to create turtle cookies.

Go ahead, lick the screen, I won’t judge. The best thing about this recipe? It’s made with a cake mix which makes it sooo easy and fast to throw together for last minute on a busy week. This shortcut just gives you time to make them special with drizzed chocolate and a delicious caramel center that is secretly made so easily with the help of our friend the Rolo.

Caramel Filled Turtle Cookie

Ok, now that we’ve made you drool, on to the recipe.

TURTLE COOKIES

INGREDIENTS:

  • 2 eggs
  • 1/3 cup oil
  • Devil’s food cake mix
  • Rolos (about 24)
  • 1/2 cup chopped pecans
  • 1/2 cup semi-sweet chocolate chips

INSTRUCTIONS:

Preheat oven to 350 degrees. In a large bowl, mix eggs, oil, and cake mix. Place a Rolo in a dough ball just large enough to cover the whole Rolo. Roll the top of the dough ball in the chopped pecans. Place on cookie sheet about 2 inches apart.

Bake for 9 minutes. Let them cool for one minute on the pan and then move to a cooling rack. (or sneak one while they are warm and the caramel is gooey!)

Microwave the chocolate chips in a bowl for 30 seconds at a time, stirring between, until smooth. Drizzle the chocolate over the top of the cookies using a spoon. Once all cookies are drizzled place them in the fridge for a few minutes to help the chocolate set.

Place on a plate for a cookie exchange or stack your delicious turtle cookies in a clear treat bag and add a festive ribbon for a cute and easy gift!

Mummy Halloween Treats

I love a fast and fun holiday treat for class parties or to hand out to friends. These Mummy Halloween Treats will put a smile on the recipients face and yours too as they are so easy to put together.

I love how the eyeballs looks like they  just woke up in a daze. All you need for these cute little mummies are three ingredients…

INGREDIENTS: (affiliate links below)

  • Hostess Ding Dongs
  • Ghirardelli White Candy Making Wafers
  • Candy Eyeballs

Ding Dong Mummy Ingredients

Just melt the candy wafers according to package directions and use a spoon to drizzle side to side over the Ding Dongs. Add two eyes while the white candy is still wet and then let dry.

They’re cute to pop in a bag to hand out to family, friend or classmates.

Or add a stick if that suits your fancy. I just covered a popsicle stick with washi tape slid it in the side and added a bow.
