Peanut Butter Oreo Rice Krispie Treats

Each Sunday we have family movie night and I whip up a special treat to share. Peanut Butter Oreo Rice Krispie Treats was the result of one of these sugary sweet experiments. We have some favorites that we make often, but every once in a while we go a little wild and invent something new.  We love Oreos dipped in peanut butter, but that is a messy treat to take down to the theater room with little ones so mixing them with a handheld treat was the perfect solution!

The best part is they are so easy! You can whip them up in a matter of minutes. Just use your standard Krispie treat recipe, but replace a cup of the cereal with a cup of crushed Oreos and add in a scoop of peanut butter. Adding peanut butter adds protein which makes them a better snack, right? Ha!

Peanut Butter Oreo Rice Krispie Treats

A mash up of favorites in one tasty and crispy treat!

Cuisine American
Prep Time 10 minutes
Cook Time 10 minutes
Total Time 20 minutes
Servings 12 servings

Ingredients

  • 3 Tbsp Butter
  • 4 cups Miniature Marshmallows
  • 1/3 cup Peanut Butter
  • 5 cups Rice Krispies
  • 1 cup crushed Oreo Cookies

Instructions

  1. In large microwave-safe bowl heat butter and marshmallows on HIGH for 3 minutes, stirring in peanut butter after 2 minutes. Stir until smooth. Microwave cooking times may vary.

    2. Add Rice Krispies cereal and crushed Oreos. Stir until well coated.

    3. Using buttered spatula evenly press mixture into 13 x 9 x 2-inch pan coated with cooking spray. Cool. Cut into 2-inch squares. Best if served within 24 hours.

Easy Shrimp Po’ Boy Sandwiches

There are few things I enjoy more than a fast, simple and tasty recipe. Something you can put together in minutes, but doesn’t seem last minute. Well folks I have a quick recipe for you that is so easy even your teens can throw it together and it tastes great too! These easy shrimp po’ boy sandwiches were a big hit with my boys.

Easy Shrimp Po Boy Sandwich

 

INGREDIENTS:

  • Hoagie Buns
  • Mayonnaise
  • Frozen Popcorn Shrimp
  • Lettuce
  • Tomato
  • Pepper Jack Cheese

Bake the popcorn shrimp according to package instructions. While baking cut your hoagie buns and spread mayo on both sides. Line bun with lettuce and tomato slices. When the shrimp comes out of the oven fill each sandwich generously and immediately cover with slices of pepper jack. The cheese should melt from the heat of the shrimp, but you can also pop the sandwich in the oven to help the melting process. Do not leave it in long or the lettuce and tomato will wilt. Enjoy!

 

 

Easy Shrimp Po Boys

 

I love the crunch of the shrimp with the little kick of heat the pepper jack adds.

The first time I ever had shrimp in a sandwich was in Rapid City, South Dakota. Weird right? That was back in my flight attendant days when we would overnight in random places and eat at off the wall places. But I remember, other than a quick trip over to Mt. Rushmore and Crazy Horse with a good pilot friend of mine, this was the highlight of our stay there. I would always order that sandwich.

The Best Burger Recipe – Mozzarella Burgers

I don’t like hamburgers. Kind of a weird way to start a burger recipe post right? Un-American? Maybe. But, it’s true. I am not one to order a hamburger at a restaurant or even choose one at a BBQ if there are other options.  Hamburgers were almost non-existent on our home menu until I found this recipe. For real, it is the best burger I have ever had. Even my husband agrees that it is a summertime menu staple. The key is, it’s not just a patty. It has a secret. Well, three secrets really, that make it a taste explosion rather than a pathetic plain patty.

Wanna see why this burger recipe is so special? The cheese is in the patty! That’s right, no need to slap a slice on at the end this baby comes with yummy cheese in every single bite! The secret is in the sauce…and the cheese…and the bread crumbs? See for yourself…

These burgers come out juicy and delicious instead of dry and bland. You must try them, you just must. I found the original Mozzarella Beef Burger recipe from Kraft and altered it to our taste. 

The Best Burger Recipe 

INGREDIENTS:
 
1
lb.  ground beef*
1/2
cup  Shredded Mozzarella Cheese
1/2
cup  Italian crumbs
1/4
cup  Barbecue Sauce (divided)
4
 hamburger buns
Optional:
green leaf lettuce
tomato
fry sauce (a Utah specialty, in simple terms ketchup and mayo mixed)

 

PREHEAT grill to medium-high heat. Mix meat, cheese, bread crumbs and 2 Tbsp. of the barbecue sauce. Shape into four patties. Refrigerate if you have time to help the patties hold together better.

PLACE patties on grill; cover grill with lid. Grill 4 to 6 min. on each side or until burgers are cooked through (160°F), brushing with remaining 2 Tbsp. barbecue sauce during last 2 min. of grilling time.
PLACE burgers on buns with lettuce, tomato and fry sauce, if desired.


*We have also used ground turkey and it works just great!

Another great tip for burger barbecuing is take the raw patties out on a plate covered with wax paper. It makes it easy to flip the four patties right on to the grill. Then, just discard the wax paper and you have a clean plate to put the cooked burgers on. You save yourself on dishes and there’s no running back and forth to the kitchen.
