The Best Burger Recipe – Mozzarella Burgers

I don’t like hamburgers. Kind of a weird way to start a burger recipe post right? Un-American? Maybe. But, it’s true. I am not one to order a hamburger at a restaurant or even choose one at a BBQ if there are other options.  Hamburgers were almost non-existent on our home menu until I found this recipe. For real, it is the best burger I have ever had. Even my husband agrees that it is a summertime menu staple. The key is, it’s not just a patty. It has a secret. Well, three secrets really, that make it a taste explosion rather than a pathetic plain patty.

These burgers come out juicy and delicious instead of dry and bland. You must try them, you just must. I found the original Mozzarella Beef Burger recipe from Kraft and altered it to our taste. 

The Best Burger Recipe 

INGREDIENTS:
 
1
lb.  ground beef*
1/2
cup  Shredded Mozzarella Cheese
1/2
cup  Italian crumbs
1/4
cup  Barbecue Sauce (divided)
4
 hamburger buns
Optional:
green leaf lettuce
tomato
fry sauce (a Utah specialty, in simple terms ketchup and mayo mixed)

 

PREHEAT grill to medium-high heat. Mix meat, cheese, bread crumbs and 2 Tbsp. of the barbecue sauce. Shape into four patties. Refrigerate if you have time to help the patties hold together better.

PLACE patties on grill; cover grill with lid. Grill 4 to 6 min. on each side or until burgers are cooked through (160°F), brushing with remaining 2 Tbsp. barbecue sauce during last 2 min. of grilling time.
PLACE burgers on buns with lettuce, tomato and fry sauce, if desired.


*We have also used ground turkey and it works just great!

Another great tip for burger barbecuing is take the raw patties out on a plate covered with wax paper. It makes it easy to flip the four patties right on to the grill. Then, just discard the wax paper and you have a clean plate to put the cooked burgers on. You save yourself on dishes and there’s no running back and forth to the kitchen.

Rainbow JELL-O Recipe

Rainbow JELL-O is not new. I had seen it many times, but was intimidated. It looked like A LOT of work. With spring here I decided I wanted to make a fun colorful treat and put my big girl pants on to brave the gelatin rainbow.

Guess what? It really isn’t that bad. The key is using a timer and it is basicaly like clock work. First you are going to need JELL-O. Decide on your colors. I opted to leave out the white layers you see between the colors in some recipes because I wanted to use all the colors of the rainbow and lets face it, that would have been too darn many layers. You may have to visit multiple stores to find all the colors. You only need the small boxes (I could only find blue and purple in large).


Items needed:
  • Six 3oz. boxes of JELL-O in rainbow colors
  • Knox Unflavored Gelatin
  • 9 x 13 pan

Decide what order you want your colors in. I started with purple on the bottom and ended with red so it would be in true rainbow order, red, orange, yellow, green, blue purple.

Mix 1 package of JELL-O with 1 tsp Knox gelatin and 1 cup boiling water.  Cool and pour into pan; refrigerate about 30 minutes to set up in the fridge before you move on to the next layer. While waiting for your JELL-O to set, make the next layer and let it cool on the counter.
Continue repeating layers until you are done. Use a timer so you can set it and forget it!
Once finished, cover and refrigerate overnight to set. Then just slice and serve! 

We love topping it with whipped cream to look like a little cloud at the end of the rainbow. I seriously could not get over how beautiful each bite was!

Warm Chocolate Bread Pudding with Turtle Topping

We all have holiday events to attend. For some it may be a work party, others a wedding, but we like to look our best. For some this means dieting or sugar altogether. I say let yourself indulge in moderation, or even better, learn to make those treats with less calories and sugar! 


My husband is a lover of bread pudding. The only time he gets it was on our recent trip to Ireland and when we end up at the dreaded buffet. He has been working his tail off finishing his Master’s degree so I decided to surprise him with a little treat, warm chocolate bread pudding with turtle topping. The secret is, I used Truvia® Baking Blend with sugar which took away 19% of the calories and 70% of the sugar! Did I mention that besides three small servings for the rest of us he ate the whole pan?! I guess he couldn’t tell the difference! The best part is, it was sooo easy!


  • INGREDIENTS
  • 21 ⁄ 2 cups skim milk
  • 1 ⁄ 3 cup Truvía® Baking Blend with sugar
  • 1 ⁄ 4 cup unsweetened cocoa
  • 2 tsp vanilla extract
  • 3 large eggs, lightly beaten
  • 1 large egg white
  • 5 cups (1-inch) cubed day-old French bread
  • Cooking spray
  • 1 ⁄ 4 cup caramel sundae syrup
  • 1 ⁄ 4 cup chopped pecans
  • 1 ⁄ 4 cup milk chocolate chips


DIRECTIONS

  • Preheat oven to 350° F.
  • Combine first 6 ingredients in a large bowl, stirring with a whisk. Add bread, pressing down with a spatula to soak. Spoon bread mixture into a 2-quart baking dish coated with cooking spray. Bake at 350° for 50 minutes. Drizzle with caramel syrup, and sprinkle with nuts. Bake an additional 5 minutes or until caramel syrup is bubbly.
  • Place chocolate chips in a small glass bowl or heavy-duty zip-top bag; microwave at high for 30 seconds or until melted. Drizzle over the bread pudding. Serve warm.
