Cereal Treat Sunday-Scotcheroos

Cute Rachael reminded me of this recipe which is one of her faves. My Sis-in-law brought Scotcheroos to our family reunion this summer and they were gone almost as fast as she could take the lid off the pan. They are a big crowd pleaser!

Ingredients:

  • 1 cup light corn syrup
  • 1 cup sugar
  • 1 cup peanut butter
  • 6 cups Rice Krispies
  • 1 package (6 oz., 1 cup) semi-sweet chocolate morsels
  • 1 cup butterscotch chips

Directions:

1. Place corn syrup and sugar into 3-quart saucepan. Cook over medium heat, stirring frequently, until sugar dissolves and mixture begins to boil. Remove from heat.
2. Stir in peanut butter. Mix well.
3. Add Rice Krispies cereal. Stir until well coated.
4. Press mixture into 13 x 9 x 2-inch pan coated with cooking spray. Set aside.
5. Melt chocolate and butterscotch chips together in 1-quart saucepan over low heat, stirring constantly. Spread evenly over cereal mixture.
6. Let stand until firm. Cut into bars when cool.

I think they would be super yummy with peanut butter chips instead of butterscotch chips too!

    We need to do a dessert exchange for the next few holidays…that way when I make these I don’t end up eating the whole pan and gaining 10 lbs in one day! I LOVE these…and now I have the recipe (oh crap!) Hahah, thanks!

    I think I shall make this minus the butterscotch chips. Butterscotch ruins everything. I heard it was Hitler’s favorite flavor of candy. That explains a LOT.
