Cereal Treat Sunday-Eyeball Recipe

October 11, 2010 By Michelle Barneck 11 Comments

If it is a peanut butter crunch treat covered in chocolate, I don’t care if it is in the shape of an eyeball, I’ll eat it! Here’s a fun little eyeball recipe to add to you Halloween collection. The best part is you can make two eyeball versions with one recipe.

Eyeball Recipe yield: 14 monster eyeballs

  • 3/4 Cup crunchy peanut butter (creamy is way too sticky to roll into balls, trust me)
  • 1/2 Cup powdered sugar
1 Cup Reeses Peanut Butter Puff Cereal, crushed
  • 1 cup chocolate chips (I used half white and half semi sweet because I wanted to make both versions)
  • 1 teaspoon Crisco
1 small bag M&M’s (I used the pretzel ones because that’s what I had)
  • Red gel frosting for white eyeballs and green frosting for brown eyeballs

1. Place peanut butter, powdered sugar and crushed cereal into a large bowl. Mix until dough forms. Take 1 Tablespoon pieces and roll into balls. Freeze for 15 minutes.

If you do both versions do a 1/2 cup choc chips and 1/2 teaspoon crisco of each kind of choc chip.

White version

2. Melt chocolate and crisco in microwave on 50 percent power stirring often. Drop the balls into the chocolate and move around with a spoon until covered. Remove them with the spoon letting the excess drip off. Place on wax paper and place M&M in center. Allow chocolate to harden and add squiggles of red gel frosting. Serve chilled.

Brown version

2. Melt chocolate and crisco in microwave on 50 percent power stirring often. Using two toothpicks about 1/3 inch apart dip peanut butter balls into chocolate leaving top centers open. Place on wax paper and let chocolate harden, then place M&M in center of opening to cover toothpick holes and form the eye. Add eyelashes with green frosting. Serve chilled.

Toddler twist: Let your little one crush the cereal using a toy hammer. Thanks to Tauni for this great idea of how to make cooking more boy friendly!

I got the original monster eyeball recipe from Picky Palate and altered it.

Happy Halloween-M&M bag costume

October 31, 2009 By Michelle Barneck 17 Comments

I whipped up this little M&M bag costume when I decided at the last minute that it would be fun to have our little one match us. I made it by blowing up a picture of an M&M bag and modge podge/taping it to a black plastic bag that I trimmed to look like the edge of an M&M bag. I even photoshopped the image to say Net wt. 27 lbs.

I also covered a baseball cap with plastic bag and glued M&Ms to it to look like the “bag” spilled. I had a basketball Easter basket that perfectly matched the orange in the peanut butter M&Ms bag so we threw that in the mix too.

Oh, and I got our M&M costumes for $3 each at a garage sale. Score!

Pumpkin Chocolate Chip Cupcakes

October 28, 2009 By Michelle Barneck 9 Comments

Here’s a fun little Pumpkin Chocolate Chip Cupcake recipe that is pretty darn healthy (I think it’s like 1 weight watchers point, no I am not on Weight Watchers, but my former co-workers who were loved these) and ridiculously easy! Oh, and did I mention yummy! My husbands co-workers (aka computer geeks) loved these!

Ingredients:
1 box spice cake
1 small can Pumpkin
1/2 bag of chocolate chips

Mix it up, put in cups and bake for 22 minutes or until toothpick comes out clean. This will make about 20ish pumpkin cupcakes depending on how big you make them.
Easy peasy. Seriously, if you mess this one up I don’t know what to tell you!

I put them in paper cups, but also borrowed this awesome pumpkin shaped pan from my sis. I think she may have purchased it at Ikea?

I added a little green frosting swirl to the pumpkin shaped ones. I did not have an fall themed plated so I used two of the generic ones to make a little container and drew a pumpkin on top with markers.

Hmmm. I gave them all away. Maybe I need to make more. 🙂

Mirror Makeover

October 27, 2009 By Michelle Barneck 8 Comments

Mirror, mirror on the wall who did the spookiest mirror makeover of all? I found this Golden beauty at a garage sale for a whole 50 cents. Yes, you read it right, 50 cents! Was the seller blind to its fabulous character? Apparently. I had grand plans to paint it some wild color, but that took a backseat to the Halloween spirit oozing from it. We had to take a detour to a dark place.

That made great strides, but it still needed a little something to push it over the edge. Enter the spider webs and a little friend my little one and I made (tutorial for spider) and it has just the right sense of “look in to me and you may see someone else in the mirror with you.” It reminds me of the Haunted mansion at Disneyland. Where we get to go next month. Yay!!!
