Have you ever had your hubby turn to you after dinner and ask to have the same thing the next night?! I hadn’t until the other night when I decided to try to make Navajo Tacos after having them at our friends house a few weeks ago. We actually had them two nights in a row and loved them just as much the second night! I do not claim that this is a healthy dinner, but it is fast and tasty!
Here’s what I did for our little family (2 adults, one tiny):
Ground Beef 1/2 lb
Black beans 1/2 can
Corn 1/2 can
Salsa about 1/2 C
Scone dough thawed (I used frozen from Macey’s deli, but you could make it from a mix too)
Oil (I used canola)
Cheddar cheese 1/2 C shredded
Lettuce a few leaves ripped up
Tomatoes 2 diced
Guacamole (I used one avocado and a few dashes of garlic salt and onion powder)
Brown ground beef and drain. Return to pan and add black beans, corn, salsa and taco seasoning to taste. Roll out scone dough and cut into large squares. Fry in oil until golden brown on both sides. Top scone with cheese and then a scoop of meat mixture. Add lettuce, tomato, and dollops (that one is for you Jen!) of sour cream and guacamole if you wish. Enjoy!
I can’t believe I never thought of having Navajo Tacos before. We always love to get them at the fair.
